In Piedmont, parks become gourmet

In Piemonte i parchi diventano gourmet

120 restaurants, 140 producers, 27 Piedmont parks give life to fourth edition of Parks to be enjoyed: these are the numbers of the initiative that will bring the products of the parks to the table throughout Piedmont, from May to September. Objective of the initiative, to spread the importance of biodiversity also from an agro-food point of view.

Twenty-seven protected natural areas affected that, from the small inn to the elegant restaurant, will accompany lovers of good food and nature to discover the local gastronomic excellence. Renowned products such as Carmagnola pepper, purple potato and brown trout or niche products such as Stupinigi red celery, Cerrato d'Asti tomato and rose syrup are just popular.

 

This year Parks to be enjoyed will also highlight and give visibility to local producers who, with expert hands, preserve and cultivate traditional raw materials that then skilled cooks transform into simple but tasty recipes or delicious and elaborate dishes.

But having nature at heart also means limiting waste. For this reason, as every year, in the venues participating in the initiative, customers will be able to ask the restaurateur for the practical "Avanzo & Mangio" eco-box in order to take home what will be left over on their plate.

Once again this year the 24 May, on the occasion of the European Park Day, this year Parks to enjoy will last until 29 September: a wide period during which you can experience the refinements of the menus born from the close collaboration between producers and restaurateurs and seize all the value of "biodiversity at the table": this too, a treasure guarded by the protected natural areas of Piedmont.

The project: to defend the knowledge and flavors of the parks

"Parks to taste" is a project promoted by the Biodiversity and Natural Areas sector of the Piedmont Region, started in 2015 with a census of the typical products of Piedmontese parks (collected in the special issue of Piemonte Parks "Parks to taste - The products" together with a short description of the producers) and continued with a collection of 'typical' recipes published in the following special issue "Parks to taste - The Recipes", a precious guide that documents the work of the parks in an evocative and precise way in safeguarding a wealth of knowledge and flavors.

From the 2015 'Il Menu del Parco' has been organized every year, a fixed appointment in all the parks of Piedmont, in correspondence with the European Day of the parks that falls every 24 in May in which the restaurateurs adherent to the project found an opportunity to offer the native products of the protected area.
