"Imposing excessive distances between customers, as well as complex sanitization procedures and the use of plexiglass dividers means not wanting to reopen restaurants". Equally devoid of logic appear the too drastic restrictive measures envisaged for the ventilation and air conditioning systems; or the hypotheses of attributing direct responsibility to the owner of the premises in relation to the individual behavior of third parties within the activity are clearly unjust.
"If these news published in the press found correspondence in the guidelines issued, they would result in the permanent closure of more than 80% of the premises in our country. We consider it insane and meaningless to even hypothesize measures of this magnitude which confirm the lack of knowledge of the sector and the logic that regulates it. There is no more time, measures pertinent to the existing reality are urgently needed. We ask the Government to consult us before issuing the new provisions, involving restaurant representatives at the decision-making table".

An appeal supported by Filiera Italia whose managing director Luigi Scordamaglia recalls how “The continuation of the closure of the restaurant channel is causing a domino effect on the entire Italian agri-food chain with production collapses of up to 40% in the wine sector, 45% of typical cheeses and 35 % of the most valuable cured meats, placing serious parts of the 3,6 million workers in the entire supply chain at serious occupational risk ". Restarting the restaurant immediately with strict but applicable rules that do not close 80% of Italian restaurants anyway is the Foundation's appeal that brings together the best of Italian agri-food.
