Turin, the names of the Masters of Taste 2021 revealed

The names of the 215 Masters of Taste 2021-2022, selected by the Chamber of Commerce, Slow Food and the Chamber Chemical Laboratory to best represent the tradition and future of Turin's food and wine. The Maestri del Gusto brand is a partner of the Food Journalism Festival through the Turin Chamber of Commerce.

"It is a time when we need good news and our Masters of Taste, constantly growing over the years in terms of number and quality, really represent good news for this territory, because it is they who tenaciously hold up the name of the best. Turin food and wine tradition - underlined the President of the Turin Chamber of Commerce Darius Gallina. - This is why we wanted to announce today the results of the selection, postponing the usual awards ceremony to more appropriate times: whoever becomes Master of Taste or who reconfirms himself as such has, in fact, the legitimate urgency to make known the excellent result both to its most loyal customers, but above all to new consumers, who in a period like this can actively support the local economy by purchasing excellent Turin products, also in view of Christmas".

"We are really happy to be able to announce, even in this particular and difficult year for everyone, the Masters of Taste of Turin and its province 2021-2022. It is a virtuous project that should be taken as an example in the promotion and protection of the excellence of a territory. This action - argues Charles Bogliotti, CEO of Slow Food Editore - over the years it has encouraged many others to do better and better, to invent new ways of local gastronomic production and distribution and to make them available to an increasingly informed and demanding public. For this we greet the new and "old" Masters of Taste with particular attention. We have reached the tenth edition of this event, an initiative that has always seen the collaboration of Slow Food. A round figure that would have deserved a celebration with all the trappings of the case, with all the protagonists in attendance, but we are sure that we will have the opportunity to recover as soon as possible what health restrictions now impose on us. In the meantime, we have a list and a story of 215 exemplary companies to shop in and that we can support to enjoy their wonders in our homes.".

The Masters 2021-2022

The extensive selection work carried out every two years by the Turin Chamber of Commerce, Slow Food and the Chamber's Chemical Laboratory has identified for this edition 215 companies, divided into 26 categories, from vinegar shops to wine growers, passing through pastry shops, ice cream shops, tea houses, liquor shops, bakeries, butchers and many others.

They are 75 Masters with headquarters in Turin, the other 140 in the province, scattered between municipalities of the hinterland up to the high mountain valleys. These include farms, cheesemakers, winemakers, but also small "boutique" shops in the historic centers of many municipalities. Between main and secondary offices, there are 90 municipalities that can boast the presence of at least one teacher in their territory.

190 companies reconfirmed from the previous selection, all realities that, once entered the project, have continued on the path of improvement and growth proposed, constantly confirming or even improving the quality levels already achieved. They are well 25, Furthermore, the new Masters, who become part of the family today, after passing a rigorous selection that started from 61 applications. Among these, for example, there is the pastry chef who produces tiny pretzels and small elaborate pastas weighing no more than 4 grams, the baker specialized in colored breadsticks, the butcher who offers gin-flavored salami, the beekeeper who makes bees travel on tour from the plains to the high mountains to obtain a honey of a thousand flavors, the young woman specializes in the production of amber syrup, obtained by macerating the flowers in water and sugar.

Thus an articulated universe is made up of company stories and life choices, young entrepreneurs and artisans for generations, traditional products and new innovations, familiar tastes and new combinations, all strictly in the name of quality, the choice of the best raw materials , of the typicality, of the observance of the hygienic-sanitary rules and of the requirements defined in the technical regulations, from good environmental practices to consumer information, from the promotion of the territory to local products, as verified with the visits and analyzes of the Chamber Chemical Laboratory .

With regard to 26 categories, the most numerous is represented by pastry shops with 25 selected, followed by winemakers (19) and ice cream parlors and butchers, with 18 Masters. Only one representative for vinegar shops, only 2 delicatessens and tea houses, while drugstores, gofri and miasse producers, liqueurs, mills, fishmongers, oil producers and vermouth producers arrive at 3 Masters: a complete fresco of ancient and modern to compose the best typical Turin table.

More and more frequent then, in the great family of Masters, the "contamination”Or collaborations between various exhibitors, with joint presentation events, the mutual use of raw materials in the creation of new proposals or simply the presence of some products of other Masters of Taste in their respective stores.

The companies that become part of the project are constantly involved in initiatives and activities; to name just a few, at this moment you can find the Masters in the virtual showcases of Terra Madre Salone del Gusto, Golosaria Fiera Online or on the social pages of the Freisa Friday initiative while, if feasible, events such as the Food Journalism Festival, Messer Tulipano, Una Mole di Panettoni, Vendemmia Torino, Dolci portici, National Pepper Fair of Carmagnola, Degustè, Festival of Theater and Literature of the Val di Susa and many other events spread throughout the Turin area and beyond.

Furthermore, during this particular 2020, many Masters have been protagonists of great gestures solidarity, through donations of products to health workers and city canteens, thus proving also Masters of solidarity. In these days, finally, many companies are reorganizing themselves to provide their products to the citizens of Turin and its province through take-away or delivery.
